Return of the Saint
His brand new restaurant at One Fullerton marks chef Emmanuel Stroobant’s return to fine dining. The dining room and service are suitably starched, but the food is decidedly lighter and with a distinct Asian note that is perhaps reflective of Stroobant’s lifestyle and preferences. Vegetables play a leading role in the menu (Stroobant became a vegetarian several years ago), with dishes like carrots—pureed, roasted and dehydrated—flavoured with cocoa nibs and tonka beans, and Japanese eggplant and scallops in a delicate dashi broth. Post meal, a petit fours trolley rolls around, heaving with lovely sweet treats that ensure the experience ends on an indulgent note.
